Ingredients
90g dates, pitted
30g almonds, chopped
30g hazelnuts, chopped
40g cashews, whole
1 big tbsp cocoa nips
1 big tbsp cocoa
1 tsp of freeze-dried raspberries
1 tsp of freeze-dried strawberries
1 pinch vanilla
1 pinch of Himalayan salt
Method
Place all the ingredients in a food-processor and puree to a paste. The nuts should not be too finely chopped so that the pralines retain some crunch.
Shape the mixture into about 20 pralines.
Transfer the pralines to a container and leave to freeze for at least 2 hours before eating. Tip: Not only do the chocolates keep for a longer time in the freezer, they also taste much better. The chocolates do not freeze completely, so they can be eaten straight from the freezer.
