Pumpkin fritters with apple compote

Anyone who knows me knows that pumpkin is my absolute favourite vegetable. I always buy extra in winter so that I can store it until spring so that I still have some pumpkin left.
For me, pumpkin comes in all shapes and sizes:
Classic as a soup, oriental style from the oven, as a pasta sauce, in a casserole, as a gratin, or even as a fritter! (There are many, many more variations that I will definitely be introducing in the future).

Ingredients (pumpkin fritters)
1 red onion
1 clove of garlic
600g pumpkin (Hokkaido)
1 potato (or more pumpkin)
2 tbsp spelt flour
2 eggs
salt
pepper
nutmeg
rapeseed oil for frying
Preparation
Coarsely grate the onions, pumpkin and potato (I use a food processor for this).
Crush the garlic and add to the onion and pumpkin mixture.
Add all the other ingredients and mix everything into a sticky dough. Add a little more flour if necessary. Flavour with salt, pepper and nutmeg.
Heat the oil in a frying pan and add 2 tbsp of the mixture to each fritter. (The oil must be hot beforehand, otherwise the fritters will not be crispy).
Fry the fritters for 3-4 minutes on each side until golden brown.
Serve with apple sauce or tzatziki. Enjoy your meal!
