Wholemeal oat quark bread

In today's fast-paced world, it is important to consciously take time for the things that are really important to you and do you good. The joy of the little things is often pushed into the background by all the stress we experience in our everyday lives.

It is more important than ever to find a balance to our stressful everyday lives. However, calm and serenity do not just mean the absence of hustle and bustle or noise, but rather consciously taking time out.

But how can we find this calm in our hectic everyday lives and turn it into a routine?

For me, it's cooking. Cooking is a bit like meditation for me, because when I'm cooking I take the time to review the day, organise my thoughts and simply switch off. What better way to do this than by baking bread? The process not only challenges our patience, but also invites us to appreciate the moment of waiting. It gives us the opportunity to treat ourselves to a little time out - and who doesn't love the taste of freshly baked bread?

To get you started, here's a bread recipe that's very easy to make and doesn't have to go anywhere.


Hafervollkorn-Quark-Brot mit Leinsamen und ohne Kneten

This bread is rich in fibre and protein and the combination of wholemeal oats, quark and linseed also provides a wealth of nutrients. The beta-glucan in oats, a dietary fibre, is particularly healthy. It not only regulates cholesterol and blood sugar levels, but also lowers blood pressure. Fibre is also particularly good for maintaining healthy intestinal flora. Linseed also provides plenty of fibre. The antioxidants in oats also have an anti-inflammatory effect.

Quark provides plenty of protein. The high protein content in bread helps the body to build muscle and at the same time ensures long-lasting satiety. Our bones are not neglected either thanks to the high calcium content in quark.

In short: a truly nutritious bread that is a real treat for the palate and the body.


Ingredients for 1 loaf

250g wholemeal oat flour (alternatively wholemeal spelt flour)

1 sachet baking powder

250g low-fat quark

1 egg

2 tbsp linseed, crushed

½ tsp fenugreek, ground

½ tsp blue fenugreek, ground

½ tsp fennel seeds

1 pinch of salt


Topping - choose one

1 tbsp rolled oats

1 tbsp linseed

1 tbsp nuts, chopped


Preparation
  1. Preheat the oven to 180° degrees.

  2. Place the flour and baking powder in a mixing bowl and mix together.

  3. Add the quark, egg, linseed and spices to the flour mixture and knead everything into a dough.

  4. Shape the dough into a loaf and place on a baking tray lined with baking paper.

  5. Brush the loaf with a little water, then sprinkle with the chosen topping.

  6. Bake in the preheated oven for 40-45 minutes. Leave to cool before slicing.
