Recipe

Ingredients
150g spelt flakes
70g hazelnuts
50g spelt flour
3 heaped tsp cacao powder
2 rows 100% chocolate (finely chopped)
3 tbsp coconut oil
3 tbsp date syrup
2 tsp cinnamon
pinch of salt
Method
In a large bowl, mix the spelt flakes, hazelnuts, spelt flour, cacao powder, cinnamon and salt. Stir in the chopped chocolate.
Gently heat the coconut oil and date syrup over low heat until melted. Pour into the dry ingredients.
Mix thoroughly, adding 1–2 tablespoons of water to help the dough bind. This step ensures the mixture holds together.
Form the dough into small cookie shapes, pressing firmly, and place them on a lined baking tray. Bake at 180°C for 12–15 minutes.
Let the cookies cool completely—they firm up as they cool, resulting in the perfect crisp-yet-chewy texture.
